The first time I made it, we both raved about how good it was after {almost} every single bite! There is just so much flavor in this meal. It's creamy, cheesy, a little spicy, and oh so yummy! And another win, it takes less than 30 minutes and only uses one pan! I love that I don't have to boil the pasta separately! So, even if you're not a fan of smoked sausage, give this one a try. It really is one of our very favorites!! :)
Spicy Sausage Pasta
Makes 4 servings

1 T. olive oil
1 (13 oz.) package turkey smoked sausage
1.5 cups diced onion
2 cloves garlic, minced
1-3/4 cups chicken broth
1/2 (10 oz.) can mild Ro-Tel tomatoes {If you want more heat, use the whole can!}
1/2 cup heavy cream
8 oz penne pasta
1/2 teaspoon salt and pepper, each
1 cup Monterey Jack cheese, shredded {I've used Cheddar Jack and Mexican Blend, too!}
1/3 cup green onions, sliced
- Add olive oil to a large, oven-safe skillet over medium high heat until very hot. Add sausage and onions and cook until lightly browned, about 4 minutes. Add garlic and cook until fragrant, about 30 seconds.
- Add broth, tomatoes, cream, pasta, salt and pepper and stir. Bring to a boil, cover skillet, and reduce heat to medium-low. Simmer until pasta is tender, about 15-20 minutes, stirring occasionally.
- Remove skillet from heat and stir in 1/2 cup cheese. Top with remaining cheese and sprinkle with scallions. Broil until cheese is melted and bubbly.
